Manuel woont al meer dan 10 jaar in de Marollen, maar hij komt uit Galicië (Spanje). Koken is voor hem zorg dragen voor anderen. Een teken van generositeit en gastvrijheid dat een band creëert. Het is ook een manier om zijn twee werelden met elkaar te combineren: het eten uit de Brusselse regionen en de traditionele keuken van zijn thuisland. In 2012 zette hij het culinair/cultureel project Open Kitchen op poten.
